Wash warm, dry hot
Hot water and a stiff brush. Put it back on the hob for a minute to drive off the water — this is the whole trick.
Oil thinly
Half a teaspoon of neutral oil, wiped until the pan looks dry rather than greasy. A thick coat goes sticky.
Cook acidic food freely
Tomatoes and wine are fine on a seasoned pan. The old advice predates a stable polymerised surface.
If it rusts
Scour it back to bare metal, dry it on the hob, then season three thin coats at 230°C. Rust is a setback, not a funeral.
